Corrective action: Inspector observed cooked chicken in the prep line holding at 48°F for less than 4 hours. Person in charge moved the chicken into the walk-in during the inspection and will continue to monitor the cold unit to ensure it is functioning properly.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Inspector observed one container of cooked shrimp, one container of cooked pork, two containers of cooked chicken and one container of curry without datemarking in the walk-in. Person in charge added the appropriate datemarking during the inspection.
