2-401.11 — Employee beverages did not meet the requirements in the code.
Corrective action: Observed employee's drink stored next to microwave on top of prep area, lacking a straw and a lid. Informed person in charge that employee drinks must have a lid and straw to prevent contamination.
2-301.15 — Employees were observed washing hands in a sink not designated as a hand washing sink.
Corrective action: Observed employee washing their hands before exiting in the prep sink near the dishwasher. Informed person in charge that hands must be washed in a designated handwashing sink.
5-205.11 — Hand washing sinks are not accessible to food employees.
Corrective action: Observed handwashing sink closes to walk in cold holding units being blocked by a rice cooker and storing a sanitizer bucket. Discussed with the person in charge about making sure handwashing sinks are accessible at all times for employees. Rice cooker and sanitizer bucket were moved during the inspection.
3-202.15 — Cans/packaged food containers were dented or damaged.
Corrective action: Observed a dented can of oyster sauce in the dry storage area. Spoke to person in charge regarding their dented can policy, and relocated the dented can to be discarded. See voluntary condemnation.
None — 15: 3-302.11(A)(1)-(2) Raw animal foods were not separated from ready-to-eat foods during storage, or preparation, to prevent cross-contamination. Observed ready-to-eat vegetables next to raw eggs on the bottom shelf in the walk in cold holding unit. Discussed with the person in charge for the need to separate ready-to-eat foods from raw foods.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Observed two containers of sauces cold holding in the walk in cold holding unit without a proper label or date marking. Discussed with the person in charge about maintaining proper date marking on foods that are stored in the cold holding unit for longer than 24 hours.
3-305.14 — Observed 1) Multiple ready-to-eat foods uncovered and stacked on top of each other in the walk in cold holding unit.
Corrective action: 2) Roasted walnuts stored under personal items on a cooling rack. 3) Observed onions that were stored on the floor underneath the prep counter. Spoke to person in charge about the risk of contamination from the exterior of the containers touching the ready-to-eat foods and the potential contamination of storing ready-to-eat foods underneath personal belongings. Also discussed the need to keep food at least six inches off of the floor.
4-501.12 — Food contact surfaces were not easily cleanable.
Corrective action: Observed the cutting board on the small cold holding unit with extensive scoring and grooves. Informed person in charge that surfaces shall be smooth and cleanable.
4-602.13 — Nonfood contact surfaces of equipment were not cleaned at a frequency necessary to prevent the accumulation of soil residues.
Corrective action: Observed the hood above the stove with a build-up of grease. Informed person in charge that the hoods need to be cleaned and degreased more frequently to prevent the build-up.
6-403.11 — Personal belongings were stored in an unapproved area.
Corrective action: Observed 1) Multiple employee belongings stored within the walk in cold holding unit. 2) Employee belongings throughout the prep area. Discussed with the person in charge regarding the need to have designated employee spaces to prevent contamination.
