3-307.11 — Observed raw chicken juice leaking onto the floor from smashed boxes in the walk in cold holding unit.
Corrective action: Discussed with the person in charge about preventing the boxes from being damaged due to weight stress on the box, and to put an easily cleanable container under the leak to prevent the leak from spreading and increasing the risk of contamination. The container was added underneath the chicken.
4-101.19 — Observed cardboard lining the shelving used to store packages of raw chicken.
Corrective action: Discussed with the person in charge that nonfood-contact surfaces must be easily cleanable and non absorbent to prevent cross contamination. Person in charge will line shelves with easily cleanable surfaces such as metal sheets.
None — 51: 5-205.15(B) Observed the walk in freezer with an excess amount of ice buildup on the floor and overhead piping. Discussed with the person in charge about this having been repaired recently. They will reach out to maintenance again to get it looked at once more.
