None — 9: 3-301.11(B) Employees were observed handling ready-to-eat foods with bare hands. Observed employee briefly touching ready to eat cabbage but quickly recognized their mistake and disposed of the cabbage. Corrected on site and followed with a brief acknowledgment and discussion on the error. Refer to voluntary condemnation.
None — 16: 4-501.114(A)-(E),(F)(1)-(2) Chlorine sanitizing solution intended to sanitize food contact surface(s) did not have a concentration between 50-200 ppm along with the corresponding pH and temperature. Observed the sanitizer within the mechanical warewashing below 50ppm with the person in charge. Corrected on site and the person in charge promptly fixed up new solution and brought up the concentration to within the 50-200ppm range.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: 1. Observed tomatoes in the cold-holding unit near the entrance was cold holding at 43-45°F and were prepared the day before. 2. Pulled pork in the other cold-holding unit by the entrance was holding around 45°F. 3. Tomatoes within the prep area were cold holding around 45°F. All instances of cold holding products above 41°F were discarded and the temperature was addressed with the person in charge. Please see the voluntary condemnation.
3-501.18 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety was not discarded within 7 days of preparation or opening of product.
Corrective action: Observed a container holding opened pre prepared salad mix with the date marking of 4-6-26. Discussed with person in charge about the need to dispose of foods past the seven days of preparation and discarded the salad mix. Please see voluntary condemnation.
7-102.11 — A working container storing poisonous or toxic material was found without a label identifying its contents.
Corrective action: Observed a spray bottle near the mop station without any identifiable label. Discussed this with the person in charge.
None — 33: 3-501.15(A) Unapproved cooling methods were used. Observed the tomatoes cooling in the cold-holding unit near the entrance covered in a double layered saran wrap container. Tomatoes were holding at 43-45°F after being prepared the day before. Tomatoes were discarded and discussed with the person in charge about venting the tomatoes while they are cooling to ensure the cold-holding temperature of 41°F is reached within the approved time frame.
4-602.13 — Nonfood contact surfaces of equipment were not kept free of an accumulation of dust, dirt, food residue and other debris.
Corrective action: Observed the hood having an excess buildup of grease and debris. Equipment in the kitchen, the fryer and grill, were also observed to have a buildup of debris and grease. Discussed cleaning frequency and the need to maintain the facility with the person in charge.
5-202.13 — Observed the mop hose laying on the floor of the drainage area which could lead to backflow problems.
Corrective action: Instructed the person in charge to wrap the house around and lift it off of the ground.
6-201.11 — Floors, walls and ceilings were not smooth, durable, easily cleanable and/or nonabsorbent.
Corrective action: Observed broken and missing tiles near the warewashing station. Discussed with the person in charge about getting it looked at.
