Observed recently prepped house salads with secured lids in the reach in cold holding unit with temperatures around 50°F for less than four hours. Discussed with the person in charge that the lids should be loosely covering the salads to promote adequate cooling. Salads will be prepped and placed in the walk in cooler without lids to facilitate the cooling process and will be moved to the reach in once they have reached a safe temperature.
