Corrective action: Shredded cheese had a temperature of 48 F. Shredded cheese was not over the four hour limit and was placed on a 4 hour limit. Manager stated that that the unit is not working and that there is a work order in on it. Corrected on site: Facility will use the Time as temperature control plan for shredded cheese, until unit is fixed.
