Corrective action: Observed multiple priority violations.
2-301.14 — Employees were observed failing to wash their hands when required by the code.
Corrective action: Observed kitchen staff fail to wash hands after sanitizing counters. Kitchen staff was informed to wash hands when switching task during inspection.
6-301.12 — Hand washing sinks lacked hand washing supplies as required by the code.
Corrective action: Observed hand sink by large pots and pans and hand sink in dish area with no paper towels. Paper towels were added during inspection.
3-202.15 — Cans/packaged food containers were dented or damaged.
Corrective action: Observed several severely dented cans near the entrance. Cans included: Two 6lb 9oz cans of slices pears, four 6lb 8 oz cans of applesauce, and three 6ib 15oz cand of chili beans. Cans were removed from shelf to be discarded.
3-501.14 — Foods were not cooled from 135°F to 70°F within 2 hours or from 135°F to 41°F within 6 hours.
Corrective action: Observed a large pot of chili in the walk in at 50 degrees F stored for longer than 24 hours. Discussed proper cooling methods with person in charge. Chili was discarded during inspection.
3-501.13 — Reduced oxygen packaged fish was not thawed as indicated by a label on the package.
Corrective action: Observed raw salmon in refrigerator near grill fully thawing inside the vacuum sealed package. Salmon was discarded during inspection. See Voluntary Condemnation.
4-501.12 — Used cutting blocks and boards could no longer be effectively cleaned and sanitized due to excessive scoring.
Corrective action: Observed cutting board in the grill area with excessive scoring. Per person in charge, boards have been ordered.
6-501.12 — Physical facilities were not cleaned as often as necessary to keep them clean.
Corrective action: Observed build up of debris on refrigerator and freezer doors by the grill area. Discussed cleaning frequencies with person in charge.
6-403.11 — Personal belongings were stored in an unapproved area.
Corrective action: Observed multiple employee drink on the salad line. Drinks were moved to designated area during inspection.
