None — 16: 4-501.114(A)-(E),(F)(1)-(2) Chemical sanitizing solution(s) used to sanitize food contact surfaces were not being used in accordance with the manufacture's use instructions. Inspector observed that the chemical sanitizing solution was testing below the required concentration. Upon further investigation, inspector observed that the container feeding the three-compartment sink was labeled as quaternary ammonia but was being filled with bleach. This resulted in an insufficient sanitizing solution. Person in charge was instructed to use bleach sanitizer and mix it manually until a service technician can purge the dosing line.

Corrective action: Inspector observed a container of chicken nuggets hot holding at 112 degrees F for less than 4 hours. Person in charge discarded the chicken nuggets during the inspection. See voluntary condemnation.
