None — 2: 2-102.12(A) The person-in-charge was not a Certified Food Protection Manager. The certified food protection manager was not there during time of inspection. Spoke with person in charge regarding CFPM requirements and they are planning to take the course next month.
6-301.12 — Hand washing sinks lacked hand washing supplies as required by the code.
Corrective action: Observed handwashing sink by kitchen entrance lacking papers towels. Paper towels were restocked during inspection.
3-202.15 — Cans/packaged food containers were dented or damaged.
Corrective action: Observed a dented can in the dry storage area. Spoke with person in charge about dented can policy. Item was discarded. See voluntary condemnation.
3-501.14 — Foods were not cooled from 135°F to 70°F within 2 hours or from 135°F to 41°F within 6 hours.
Corrective action: Observed three containers of green chile in the reach in cold holding unit with temperatures between 67-70°F for longer than four hours. Discussed with the person in charge about cooling methods, and to start keeping a temperature log to ensure that proper cooling is reached within the six hour time frame. Inspector will provide cooling logs via email. Green chile was discarded during the inspection. Please see voluntary condemnation.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Observed and open package of hot dogs and cooked green chili made the previous day(s) that lacked adequate date marking as required. Discussed with the person in charge that date marking should be present on opened packages of meat and any cooked foods to ensure food safety. Labels will be added to open food items.
None — 37: 3-602.12(C) Consumers were not notified of presence of major food allergens in unpackaged foods as required by the code. Observed an allergen notice not visible to consumers. Discussed with the person in charge that allergen notices should be visible to customers. Allergen notice will be moved to a more visible location.
6-501.12 — Physical facilities were not cleaned as often as necessary to keep them clean.
Corrective action: Observed buildup of food debris and grease along fryer equipment, floors, and walls. Spoke to person in charge about a deep clean for these items. Per person in charge, they have started to deep clean and will continue to clean up the debris.
6-403.11 — Personal belongings were stored in an unapproved area.
Corrective action: Observed personal belongings being stored on food prep areas. Discussed with the person in charge that personal belongings should remain in designated areas to prevent possible contamination. Personal items were moved during the inspection.
