None — 15: 3-302.11(A)(1)-(2) Raw animal foods were not separated from ready-to-eat foods during storage, or preparation, to prevent cross-contamination. Observed raw chorizo stored above fully cooked chicken in the walk-in cooler. Chorizo was moved during inspection as a method of contamination prevention during storage.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed opened condiment containers holding at 44°F in the reach-in cooler next to the ice machine. Containers were moved to alternative refrigeration, and this cooler will be monitored to ensure adequate cold holding temperatures of TCS foods.
4-501.11 — Utensils or equipment were not maintained in good repair or condition.
Corrective action: Observed the mechanical ware washing machine not dispensing sanitizer solution as required. Person in charge will notify technician to resolve issue. The three-compartment sink is being used for manual sanitizing until the mechanical machine is operational.
4-302.14 — A test kit or other device that accurately measures the concentration of sanitizing solution was not available at time of inspection.
Corrective action: Observed no chlorine test strips on site to test concentration of dish machine sanitizer solution. Person in charge will obtain test strips.
