3-501.16 — (A)(2) Reach in cooler by the grill was not keeping TCS food items at appropriate temperatures of 41 F.
Corrective action: Chuletas and Raw Bacon each had temperatures of 44 F. Items were over the four hour limit and were discarded. Other items were not over the four hour limit and were moved to another cooler. Please see attached voluntary condemnation for a complete list of discarded items.
