2-301.14 — Employees were observed failing to wash their hands when required by the code.
Corrective action: Observed employee in the dishwashing area fail to wash hands when changing tasks from washing to cleaning dishes. Spoke with person in charge about proper hand washing. Hands were washed during inspection.
None — 15: 3-304.15(A) Single-use gloves were not discarded when they became soiled and/or damaged. Observed employee in dishwashing area use the same gloves to wash dishes, clean dishes and change to other tasks such as cleaning other areas without a glove change between. Education was provided and gloves were changed during inspection.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold holding at internal temperatures greater than 41°F.
Corrective action: Observed several temperature-controlled salsas and crema in the cold holding unit in the kitchen with internal temperatures of 44 degrees F, from the walk-in cooler. Items were moved back to the walk-in cooler to reach proper temperatures during inspection. Observed shredded cheese being held for less than 4 hours in an ice bath with an internal temperature 43-45 degrees F. Spoke with person in charge about ensuring items are submerged in ice to get down to proper cold hold temperature of 41 degrees F.
3-501.13 — Reduced oxygen packaged fish was not thawed as indicated by a label on the package.
Corrective action: Observed tilapia thawed in the walk-in cooler without being removed from packaging as label indicates so. Spoke with person in charge about thawing properly for these packages going forward. Items were discarded during inspection. See voluntary condemnation.
3-305.11 — Food was not stored at least 6 inches above the floor.
Corrective action: Observed bags of beans being stored on the floor of the dry storage area. Spoke with person in charge about ensuring food is to be kept 6 inches off the floor.
3-304.12 — In-use utensils were improperly stored (without the handle above the top of the food, not on a clean surface, not in running water, or not in water of at least 135°F).
Corrective action: Observed ice scoop handle being submerged in the ice. Spoke to person in charge about ensuring the handle is to be upwards and out of the ice to prevent the risk of contamination. Ice handle was moved during inspection.
4-602.13 — Nonfood contact surfaces of equipment were not kept free of an accumulation of dust, dirt, food residue and other debris.
Corrective action: Observed build up of debris on the cold holding unit in the kitchen. Observed a buildup of food debris and grease, behind the fryer and on the sides of the grill. Spoke to person in charge about cleaning frequency for these items.
6-201.11 — Floors, walls and ceilings were not smooth, durable, easily cleanable and/or nonabsorbent.
Corrective action: Observed cracks and missing flooring in the kitchen area. Spoke to person in charge about ensuring floors are easily cleanable to prevent the buildup of debris. Observed unpainted finishes in dry storage and soda machine area. Per person in charge, they are working on getting new flooring in.
