Corrective action: Observed employee beverage in the back of the kitchen on a food prep table without a lid and a straw. Spoke with person in charge regarding employee beverage requirements.
2-301.14 — Employees were observed failing to wash their hands when required by the code.
Corrective action: Observed employee touch raw chicken and then proceed to touch multiple pans with same gloves on, without a hand wash and glove change. Spoke with person in charge regarding proper hand washing when switching tasks. Hands were washed and pans that were touched were washed during inspection.
None — 15: 3-304.15(A) 1.) Single-use gloves were not discarded when they became soiled and/or damaged. Observed employee touch raw chicken and use the same gloves to touch pans. Spoke with person in charge about changing gloves when switching tasks. 2.) Raw animal foods were not separated from ready-to-eat foods during storage, or preparation, to prevent cross-contamination. Observed raw bacon being stored above ready to eat foods in the walk in cooler. Spoke with person in charge about proper storage for raw and ready to eat items. Raw bacon was moved to the bottom shelf during inspection.
None — 16: 4-501.114(A)-(E),(F)(1)-(2) Chlorine sanitizing solution intended to sanitize food contact surface(s) did not have a concentration between 50-200 ppm along with the corresponding pH and temperature. Observed sanitizer bucket in the kitchen with a concentration below 50 ppm for chlorine. Spoke with person in charge about proper concentration for this item. More chlorine was added to proper concentration during inspection.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed chicken and shrimp in the reach in cooler under the grill with an internal temperature of 45 degrees F for less than an hour. Spoke with person in charge about proper cold holding temperatures. Ice baths were made for products and proper temperature of 41 degrees F or below were met during inspection.
3-501.18 — 1.) Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Observed opened milk in the standing cooler in the server station and opened half and half in the walk-in cooler being held for more than 24 hours without a date mark. Spoke with person in charge regarding proper date marking requirements for temperature-controlled items. 2.) Refrigerated, ready-to-eat food(s) that require time or temperature control for safety was not discarded within 7 days of preparation or opening of product. Observed several temperature-controlled items including mole, fajita salsa, and culichi sauce with date marks of 7/19-7/18. Spoke with person in charge about proper disposition for temperature-controlled items being held for 7 days or longer. Items were discarded during inspection. See voluntary condemnation.
3-302.12 — Working containers holding food or food ingredients that are removed from their original packages shall be identified with common name.
Corrective action: Observed items in the freezer in the dry storage with a common name identifying the item. Spoke with person in charge about ensuring labels are added to products that are removed from their original packaging.
6-202.15 — Outer openings were not protected against the entry of pests.
Corrective action: Observed visible light coming through the back door of the kitchen. Spoke with person in charge regarding a weather stripping to ensure the door is protected against the entry of pests.
4-602.13 — Nonfood contact surfaces of equipment were not kept free of an accumulation of dust, dirt, food residue and other debris.
Corrective action: Observed a buildup of grease on the hood above the grill in the kitchen. Observed a buildup of dust and debris on the vents in the kitchen. Spoke with person in charge regarding cleaning frequency for these items.
6-201.13 — Floors, walls and ceilings were not smooth, durable, easily cleanable and/or nonabsorbent.
Corrective action: Observed cracked floor tiles in the dishwasher area with standing water. Spoke with person in charge about fixing tiles to ensure cleanability.
