Corrective action: Observed dented tomato paste can downstairs in the dry storage area. Spoke with person in charge about dented can policy. Item was discarded. See voluntary condemnation.
None — 15: 3-302.11(A)(1)-(2) Raw animal foods were not separated from ready-to-eat foods during storage, or preparation, to prevent cross-contamination. Observed raw meats being stored above ready to eat foods in the fridge downstairs. Spoke with person in charge about proper storage seperation for raw and ready to eats food.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed lettuce in the cold holding unit in the kitchen with an internal temperature of 47 degrees F for more than 4 hours. Spoke with person in charge about proper cold holding and to ensure product is cooled down to 41 degrees before added to the top of the cold holding unit. Items were discarded during inspection. See voluntary condemnation.
None — 24: 3-501.19(A),(B)(3),(C)(2) and (3) Time as a public health control was used without marking foods to indicate when they should be discarded. Observed blanched fries being held at room temperature for less than 4 hours with no discard time. Spoke with person in charge about time as a public health control application and written discard times for these items. Application will be sent via email.
7-204.11 — Poisonous or toxic materials were not used in accordance with manufacturer's directions.
Corrective action: Observed chlorine sanitizer for the dish machine testing above 200 ppm. Spoke with person in charge about diluting item with water to ensure proper concentration of 50-200 ppm for chlorine sanitizer. Item was diluted and was testing at the proper concentration during inspection.
4-301.11 — The equipment available is not capable of cooling, heating, or holding foods at the temperatures required by the code.
Corrective action: Person in charge informed inspector during beginning of inspection that walk-in cooler was out, and all food was moved to other cooler. Facility has adequate refrigeration for food items. A work order was put in for item and will be repaired this week.
3-304.12 — In-use utensils were improperly stored (without the handle above the top of the food, not on a clean surface, not in running water, or not in water of at least 135°F).
Corrective action: Observed a condiment cup being used to scoop out salsa and was left submerged in the product. Spoke to person in charge about using a scoop with a handle to prevent the risk of contamination. A scoop with a handle was used to replace item during inspection.
