Corrective action: Observed shredded cheese in the fryer unit temping between 48-50 degrees F for less than 4 hours. Cheese was moved to the walk-in refrigerator during the inspection.
3-304.14 — Wiping cloths were not held in a reasonably clean sanitizer solution of appropriate concentration between use.
Corrective action: Observed the sanitizer bucket in the butcher area reading below 272ppm for a lactic acid sanitizer. The sanitizer bucket was re-made during the inspection.
6-501.110 — Personal belongings were stored in an unapproved area.
Corrective action: Observed employee belongings stored in the bakery section of the kitchen as well as in the back dry storage area. Person in charge was informed that employee belongings must be stored in a designated away from any food and equipment. Items were moved during the inspection.
