2-301.14 — Employees were observed failing to wash their hands when required by the code.
Corrective action: Observed employee using a personal device while getting ready to cut vegetables. The employee proceeded to cut vegetables, but were instructed on the need to wash their hands after using personal items. Employee washed their hands after discussion.
None — 15: 3-302.11(A)(1)-(2) Raw animal foods were not separated from ready-to-eat foods during storage, or preparation, to prevent cross-contamination. Observed 1) raw chicken next to a box of cabbage on the bottom shelf in the walk in cold holding unit. 2) raw sausage above ready-to-eat pasta in the cold holding unit next to the grill. Raw animal foods were not separated by type to prevent cross-contamination. Observed raw shrimp underneath raw chicken in the walk in cold holding unit. Discussed with the person in charge about the need to keep ready-to-eat foods separated from raw foods, as well as the need to separate out raw foods based on the type. After discussion, the raw foods were properly stored on different shelves and away from the ready-to-eat foods during the inspection.
4-301.11 — Observed cold holding unit in the prep area cold holding raw chicken and pooled egg between 44-45°F for less than hour.
Corrective action: Spoke to the person in charge about the need for proper cold holding temperatures and they lowered the cold holding unit setting. Observed the temperatures drop later in the inspection indicating that the cold holding unit was working, but not set low enough to properly cold hold some of the items.
None — 37: 3-602.12(C) Working containers holding food or food ingredients that are removed from their original packages shall be identified with common name. Observed multiple containers throughout the kitchen without labels containing common food items such as sugar, corn starch, and flour. Spoke to the person in charge about needing labels on any food items that are not easily identifiable. Consumers were not notified of presence of major food allergens in unpackaged foods as required by the code. Written notification will be provided via email.
None — 46: 3-304.15(B)-(D) Slash-resistant or cloth gloves were used with unapproved foods or did not meet the requirements of the code. Observed employee using non single use gloves while prepping food and not sterilizing after use. Discussed with the person in charge about using single use gloves when working with food to prevent contamination.
6-501.12 — Physical facilities were not cleaned as often as necessary to keep them clean.
Corrective action: Observed buildup of food debris and grease throughout the kitchen including under the grill, under the prep stations, and general cleaning throughout the facility. Reviewed deep cleaning schedule and requirements with person in charge and they acknowledged the mess and their new cleaning routines that are being put in place.
6-403.11 — Personal belongings were stored in an unapproved area.
Corrective action: Observed personal food items scattered throughout the walk-in cold holding unit as well as the fridge next to the kitchen area. Spoke to the person in charge about separating out personal items from food that will be served to customers. Items were moved to appropriate locations that were separated from restaurant items.
