2-301.14 — Employees were observed failing to wash their hands when required by the code.
Corrective action: Observed employee touch raw hamburger and then proceed to other tasks without a hand wash and changing gloves in between. Spoke with person in charge about ensuring hands are washed and gloves are changed in between changing tasks to prevent the risk of contamination. Hands were washed and gloves were changed during inspection.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold holding at internal temperatures greater than 41°F.
Corrective action: Observed TCS items sitting on top of the ice bath temping at 45 degrees. Spoke with person in charge about ensuring items are submerged in the ice to ensure proper temperatures. Items were submerged into ice bath during inspection and temperatures were adequate.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Observed tamales and salsa in the walk-in cooler being held for more than 24 hours without a date mark. Spoke with person in charge regarding date marking requirements for temperature-controlled products. Dates were being added during inspection.
4-601.11 — (B), and (C) Nonfood contact surfaces of equipment were not cleaned at a frequency necessary to prevent the accumulation of soil residues.
Corrective action: Observed a build up of grease on the hood and along the sides of the fryers. Spoke with person in charge regarding cleaning frequency for these items.
6-403.11 — Personal belongings were stored in an unapproved area.
Corrective action: Observed several employee items being stored above consumer items in the walk in cooler and above the burrito warmer. Spoke with person in charge about a designated area away from consumer items to store these items.
