Corrective action: Observed multiple time/temp-controlled food items temping between 45-51 degrees F for an unknown amount of time in the walk-in refrigerator. All items were discarded during the inspection. See voluntary condemnation
3-304.12 — In-use utensils were improperly stored (without the handle above the top of the food, not on a clean surface, not in running water, or not in water of at least 135°F).
Corrective action: Observed scoopers in the shredded cheese of both prep units stored with the handle not above the food. Scoops were corrected to ensure handles were not in contact with the food.
4-501.11 — Utensils or equipment were not maintained in good repair or condition.
Corrective action: Observed the walk-in refrigerator ambient air temping between 50-51 degrees F during inspection. Informed person in charge that cold holding units for time/temp-controlled products must temp at or below 41 degrees F. Maintenance arrived during the inspection.
