Corrective action: Observed one pre-portioned ready-to-eat chicken cold-holding around 44-45°F at the prep station cold-holding unit for less than four hours. Discussed with the person in charge to keep the chicken below the cold holding line in the metal tub, as well as to try and keep the lid closed for this station to maintain the proper temperature. The chicken was moved further into the tray to get to an appropriate temperature.
