Corrective action: Inspector observed several gallon milk containers in multiple reach in coolers opened without datemarking. Person in charge was not certain of when some of the milk containers were opened. To ensure proper date marking and tracking, a date mark should be labeled on any item that may be kept longer than 24 hours.
6-501.14 — Ventilation systems are not cleaned and/or filters are not changed so as not to be a source of contamination.
Corrective action: Inspector observed excessive dust and debris built up on the outside and within the ventilation above the dry storage cabinets. Person in charge was instructed to place a work order to have the vents cleaned.
