Corrective action: Inspector observed five opened milk gallons in different refrigeration units without datemarking. Person in charge stated that most of the milk was used within 24 hours but had no way to track it or ensure it was properly datemarked if it went past. Inspector discussed datemarking all open products to ensure uniform used of the milk products and avoid any gallons being missed.
