Corrective action: Observed employee crack raw eggs and then handle ready to eat cheese without changing gloves and washing hands. Spoke with person in charge about proper handwashing.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed a container of sliced tomatoes, shredded cheese, sliced ham, and sliced cheese being held at an average of 47 degrees F for less than 4 hours at the ice bath in the food prep area. Person in charge replaced ice and will be keeping at temperature log.
3-302.12 — Working containers holding food or food ingredients that are removed from their original packages shall be identified with common name.
Corrective action: Observed several bottles in the food prep area containing, cooking oil, melted butter, and water without proper labeling. Spoke with person in charge about labeling containers.
4-602.13 — Nonfood contact surfaces of equipment were not kept free of an accumulation of dust, dirt, food residue and other debris.
Corrective action: Observed a build up of dust, grease, and other debris on the sides of the fryer, the hood over the fryer and grill. Spoke with person in charge about cleaning frequency.
