Corrective action: In the cooler near the frier. The items were there for under 4 hours and will be moved to another unit if temperatures are not restored. A work order has been submitted, and the unit will undergo maintenance by the end of the day. 2) Inspector observed shredded lettuce, cut tomatoes and sliced American cheese holding at 45-47°F. The lettuce was held for over 4 hours and was discarded. See voluntary condemnation. The other items were recently prepped. More trays will be placed in the unit to hold cold air in, and the cooler lid will remain shut when not in use.

Corrective action: PIC was instructed to have a separate, designated location for employee food and drink, and to store such items below consumer foods.

Corrective action: The ambient air temperature was holding at 45°F. Items were temping between 35-37°F. The PIC reported that the unit was out since the previous night. A work order was submitted, and the inspector will be updated once the unit has been repaired.
