Corrective action: Inspector observed cheese holding at 46°F for less than 4 hours in the cold table unit next to the hot line. Person in charge moved the cheese into the walk-in to cool back to temp during the inspection.
6-501.112 — Dead or trapped birds, insects, rodents or other pests were not removed from the establishment often enough to prevent accumulation, decomposition, or the attraction of pests.
Corrective action: Inspector observed three sticky traps with several dead gnats and cockroaches on them. Inspector discussed removing the traps at a greater frequency and mitigating the food debris on non-food contact surfaces.
6-501.12 — Inspector observed food debris and syrup behind several pieces of equipment and shelving throughout the facility.
Corrective action: Inspector discussed a more frequent deep cleaning schedule with the person in charge to mitigate pest activity.
