None — 15: 3-302.11(A)(1)-(2) Raw animal foods were not separated by type to prevent cross-contamination. Observed ground sausage packages on shelves above raw bacon in a walk-in-cold holding unit. Discussed with the person in charge that raw foods should be separated by type and temperature to prevent possible cross contamination. The sausage should be moved below the bacon or adequately separated to prevent cross contamination.
