Corrective action: Observed an employee wash their gloved hands after dealing with ready-to-eat food items and proceed to change out the gloves into new ones without a handwash in between. Discussed with the person in charge, that when single use gloves become soiled, or when changing tasks, employees must dispose of the gloves and wash their bare hands before putting on new gloves. The employee removed their gloves during the inspection and washed their hands before putting on a new pair of gloves.

Corrective action: Observed manufactured sauces sitting on a counter in the small walk-in-cold holding unit prep area at temperatures around 45-48°F for less than four hours. Discussed with the person in charge that the room underwent a defrost cycle recently which increases the ambient room temperature and that items being thawed must be done so under 41°F or under running cold water to prevent the growth of pathogens. The food items were moved to another walk-in-cold holding room to thaw under proper refrigeration temperatures.
