3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Inspector observed a veggie plate, a plate of stuffed mushrooms, a tray of sandwiches and stuffed peppers, 3 containers of BBQ chicken, and 2 containers of chicken wings. The containers with a known date of preparation were datemarked during the inspection and the containers of unknown date were discarded during the inspection. See Voluntary Condemnation.
3-304.12 — In-use utensils were improperly stored (without the handle above the top of the food, not on a clean surface, not in running water, or not in water of at least 135°F).
Corrective action: Inspector observed the tongs used to grab food items out of hot holding that were being stored on the cutting bored surface. Person in charge was instructed to keep the handles out of contact with food or food contact surfaces, and to clean/replace the utensils every four hours.
6-501.12 — Physical facilities were not cleaned as often as necessary to keep them clean.
Corrective action: Inspector observed a buildup of food debris in the walk-in cooler. Person in charge will increase the cleaning frequency of the walk-in.
