Observed ready to eat shrimp and crab stored next to raw shrimp in the display case of the meat/seafood department. Informed person in charge that ready to eat foods shall be separated from raw food to prevent cross contamination. The dividers in the display case were raised to help clearly separate raw from ready to eat.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed raw chicken temping between 45-47 degrees F for an unknow amount of time. Informed person in charge that time/temp-controlled products need to be at 41 degrees or lower for cold holding, Chicken was discarded during the inspection. See voluntary condemnation.
6-403.11 — Personal belongings were stored in an unapproved area.
Corrective action: Observed employee belongings stored on a shelf next to consumer products in the bakery area. Informed person in charge that person items must be stored in a designated area to prevent contamination. Items were moved during the inspection.
