3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold holding at internal temperatures greater than 41°F.
Corrective action: Observed chicken casserole in the standing fridge downstairs with an internal temperature of 45-49 degrees F. Items stored near top of fridge were all temping at 39-41 degrees F, spoke with person in charge about storage of items in this fridge. Casserole was discarded during inspection. See voluntary condemnation.
4-301.11 — The equipment available is not capable of cooling, heating, or holding foods at the temperatures required by the code.
Corrective action: Observed standing fridge in the dry storage area with an ambient air temperature of 50 degrees F and a buildup of ice. Spoke with person in charge about putting in a work order for this item, and to not store any temperature-controlled items until item is restored.
3-304.12 — In-use utensils were improperly stored (without the handle above the top of the food, not on a clean surface, not in running water, or not in water of at least 135°F).
Corrective action: Observed handle for flour scoop being submerged in the flour during inspection. Spoke with person in charge about ensuring handle is to be faced upward away from any risk of contamination.
4-601.11 — (B), and (C) Nonfood contact surfaces of equipment were not kept free of an accumulation of dust, dirt, food residue and other debris.
Corrective action: Observed a buildup of grease and debris along the sides of the equipment in the kitchen and along the floors. Spoke with person in charge regarding cleaning frequency for these items.
