None — 15: 3-302.11(A)(1)-(2) Raw animal foods were not separated from ready-to-eat foods during storage, or preparation, to prevent cross-contamination. Observed raw shrimp stored above ready to eat lettuce. Shrimp was moved to the bottom shelf during inspection as a method of contamination prevention during storage.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: 1.) Observed cooked corn, potatoes, and raw shrimp stored in ice baths next to the grill holding at 50°F for less than four hours per chef. Items were moved to a cooler during inspection to allow for temperature decline. 2.) Observed shredded cheese, pico de gallo, and spinach in the condiment cold hold unit holding between 70-75°F, items were discarded during inspection. Observed 3.) lettuce at the salad prep cooler holding between 45-50°F, lettuce was discarded during inspection. Reviewed cold holding requirements for TCS foods, and information about time as a public health control for cold stations that do not seem to be holding cold temperatures are required.
None — 33: 3-501.15(A) Unapproved cooling methods were used. Observed cooked noodles being cooled in the walk-in cooler fully covered with the lid on it. Spoke to person in charge about proper cooling methods. Lid was removed during inspection.
4-501.11 — Utensils or equipment were not maintained in good repair or condition.
Corrective action: Observed drops from an unknown source on the ceiling connection lines of the walk-in cooler storing condiments and water pooling on the floor from drips. Person in charge will work on service and repair of any leaks in this unit.
6-403.11 — Personal belongings were stored in an unapproved area.
Corrective action: Observed employee belongings such as purses and keys stored on countertops in the bar area. One set of items was moved to a designated employee area during inspection and the other person item was to be moved following inspection.
