2-301.14 — Employees were observed failing to wash their hands when required by the code.
Corrective action: Observed 1) employees enter the kitchen without washing hands 2) handle clean dishes after handling dirty dishes without a handwash in between. Discussed with the person in charge that a hand wash is necessary any time there is a change in task that could introduce a risk of cross contamination. Instruction and guidance was provided during the inspection.
5-205.11 — Hand washing sinks are not accessible to food employees.
Corrective action: Observed a utensil storage rack sitting inside of the handwashing sink closest to the main kitchen entrance. Discussed with the person in charge that sinks must remain readily available at all times to ensure employees have access to handwashing and to prevent possible contamination. Utensil storage rack was removed during the inspection. Hand washing sinks lacked signs telling employees that they must wash their hands. Observed the handwashing sink in the back kitchen area without a sign advising employees to wash their hands. Discussed with the person in charge about maintaining signage to promote good handwashing practices. Signage was posted during the inspection.
3-202.15 — Cans/packaged food containers were dented or damaged.
Corrective action: Observed cans of apple sauce with dents along the bottom seam. Spoke to person in charge about their dented can policy. Cans were discarded during the inspection, please see Voluntary Condemnation.
None — 15: 3-302.11(A)(1)-(2) Raw animal foods were not separated by type to prevent cross-contamination. Observed ground beef stored above bacon and pork loins in the walk-in cold holding unit. Discussed with the person in charge about storing ground meats below whole muscle meats due to cooking requirements to prevent possible cross contamination. A shipment was recently received which led to the improper storage. The pork loins and bacon were moved above the ground beef during the inspection.
4-501.11 — Utensils or equipment were not maintained in good repair or condition.
Corrective action: Observed a reach in cold holding unit that was currently out of service due to the need for repairs. Discussed with the person in charge about this equipment and they currently have a work order in to get it looked at.
