Corrective action: Observed packages of sliced cheese at the prep table holding at 53 degrees for less than 4 hours. Cheese was moved to an upright cold holding unit.

Corrective action: Observed 1 towel not being held in sanitizer solution. Spoke with person in charge about proper storage of wiping cloths.
