The dish machine was temping at 152 degrees F but got up to 160 after a few runs. Person in charge will put in a work order for this item to ensure consistency.
7-204.11 — Poisonous or toxic materials were not used in accordance with manufacturer's directions.
Corrective action: Observed sanitizer bucket in the kitchen with too high of concentration for quaternary ammonia. Spoke with person in charge regarding proper concentration for this item, and to dilute sanitizer until dispenser is fixed.
