Corrective action: 1) Observed lettuce, shredded cheese, and Havarti cheese temping between 44-54 degrees F. 2_) Observed raw chicken holding above 45 degrees. Person in charge placed all items in an ice bath.

Corrective action: 1) The nonfood contact surfaces of equipment had an excessive amount of dust, flour and food debris. 2) The floor beneath the fryer had a buildup of grease deposited. 3) Drain in the food prep area and near the ice machine was observed to be full of debris. Person in charge was instructed to stick to the schedule and clean more frequently.
