3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Inspector observed cheese slices, shredded cheese, and shredded lettuce holding above 41°F for over four hours in the cold holding unit near the chicken prep line. Person in charge discarded the items during the inspection. See voluntary condemnation.
4-301.11 — The equipment available is not capable of cooling, heating, or holding foods at the temperatures required by the code.
Corrective action: Inspector observed a cold holding unit that was broken and holding at ambient temperature. The facility was instructed to keep the TCS products on ice and to embed the containers into the ice so that the ice surrounds the walls of the container. Person in charge will submit a work order for this equipment.
4-602.13 — Nonfood contact surfaces of equipment were not cleaned at a frequency necessary to prevent the accumulation of soil residues.
Corrective action: Inspector observed chicken juices and chicken contaminated flour across the chicken prep line adjacent to the cold holding unit and cutting board where ready-to-eat sandwiches were prepared. Inspector discussed the risk of cross contamination with the person in charge and requesting wiping and cleaning of these surfaces more frequently.
6-501.12 — Inspector observed the floor drain next to the walk-in cooler clogged and full of food debris including raw chicken.
Corrective action: Inspector smelled rotting chicken. Person in charge was instructed to clean the floor drains more frequently to allow for proper drainage of contaminated food debris. The drain was cleared and cleaned during the inspection.
