None — 2: 2-102.12(A) The person-in-charge was not a Certified Food Protection Manager. Discussed with the person in charge about taking the course which they are interested in completing. Inspector will send out class information as well as study materials for the course.
None — 33: 3-501.15(A) Unapproved cooling methods were used. Observed two tightly sealed small containers of cut tomatoes and lettuce cooling in the small reach in cold holding unit next to the handwashing sink for less than four hours at a temperature of around 50°F. Discussed with the person in charge that it is best to remove the lids when cooling prepped food items and to put them in a metal container to facilitate the cooling process. The food items were moved to the walk in cold holding unit and the lids were removed to facilitate cooling on site.
3-302.12 — Working containers holding food or food ingredients that are removed from their original packages shall be identified with common name.
Corrective action: Observed unlabeled sauce bottles used in the prep area. Discussed with the person in charge that food items that are removed from the manufacture's packaging needs to be labelled with common name to prevent possible cross contact of allergens for consumers. Labels were added during the inspection. Consumers were not notified of presence of major food allergens in unpackaged foods as required by the code. Discussed with the person in charge about having an allergen notice visible for consumers. Provided allergen handout to the person in charge during the inspection.
3-305.11 — Food was not stored at least 6 inches above the floor.
Corrective action: Observed two containers of sauces on the floor of the walk in cold holding unit. Discussed with the person in charge about ensuring that containers of food items remain at least six inches off of the floor. Person in charge moved the food items during the inspection.
4-501.11 — Equipment must be kept in good repair.
Corrective action: Mop sink had a large hole in the side. Spoke to person in charge about the status on the mop sink and they currently have one ordered and are waiting on it being replaced.
4-602.13 — Nonfood contact surfaces of equipment were not kept free of an accumulation of dust, dirt, food residue and other debris.
Corrective action: Observed a large buildup of debris on the top rotating oven rack. Discussed with the person in charge about the potential of contamination onto food products on the lower rack, and increasing the cleaning frequency to prevent this contamination.
5-202.13 — An inadequate air gap between the water supply inlet and the fixture flood rim was present.
Corrective action: Observed connected hoses from the faucet in contact with the basin of the three compartment sink and mop sink. Discussed with the person in charge about keeping the hoses lifted off of the basins to prevent backflow contamination. Hoses were moved around the faucet to prevent contamination during the inspection.
