Observed sanitizing solution below 200 ppm. Spoke with person in charge regarding proper sanitizer concentration.

5-103.11 — The water system and hot water generation was not sufficient to meet peak demands.

Corrective action: Observed water only getting to 77 degrees F during inspection for both hand washing sink and for the three compartment sink. Spoke with the person in charge about this item. Person in charge has a work order put in for this item and was directed to only serve prepackaged items until hot water is restored.
