Corrective action: Observed one 36 ounce can of Hormel Chili severely dented at the seem. Discussed with person in charge to dispose of can. See voluntary condemnation.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed cut tomatoes, lettuce, and shredded cheese being used as toppings that were around 50°F for under an hour. Discussed with person in charge to dispose of these items after lunches would be concluded within the next hour.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Observed a package of opened lunch meat that was not date marked. Discussed with the person in charge to appropriately date mark and dispose of these food items if they are not used within 7 days of opening.
4-901.11 — Equipment and utensils were not allowed to air dry after cleaning/sanitizing.
Corrective action: Observed employee using a rag to dry equipment and utensils after sanitation. Discussed the need to air dry these materials after sanitation, and provided a new plan for dishes that have been cleaned.
