Corrective action: Observed 5.5 lb can of artichoke Hearts severely dented. Can was put away to be returned to distributer.
None — 16: 4-602.11(C) Equipment, utensils, and/or food-contact surfaces used in contact with food items that require time/temperature control for safety are not being cleaned at least every 4 hours. Per person in charge food contact surfaces are being cleaned at night and in the morning. Discussed increasing cleaning frequencies to at least every 4 hours.
None — 33: 3-501.15(B) Unapproved cooling methods were used. Observed a bin of cut tomatoes tightly sealed in the walk in at temperatures of 44°F for less than 4 hours. Seal was removed from tomatoes to allow proper cooling. Discussed cooling from ambient air with person in charge.

Corrective action: Observed mop sink hose dragging under the sink rim.
