2-103.11 — (A)-(O), and (Q) The person-in-charge did not perform their duties as required by the code, leading to violations in additional areas.
2-301.14 — Employees were observed failing to wash their hands when required by the code.
Corrective action: Inspector observed hot line staff failing to wash their hands when touching clothing, changing task, or changing gloves. This may have largely been attributed to the inaccessibility of both hand-washing sinks in the food prep areas. Inspector discussed making these sinks available and proper hand washing with the person in charge.
5-205.11 — Hand washing sinks are not accessible to food employees.
Corrective action: Inspector observed both hand-washing sinks in the food prep areas with a portable swamp cooling unit hooked up to the faucet. This caused the sinks to be inaccessible to employees. Inspector discussed with the person in charge the importance of hand-washing availability and that hand washing sinks should only be used for hand washing
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold holding at internal temperatures greater than 41°F.
Corrective action: Inspector observed five different cold holding units in the hot food prep line and pizza prep line with the majority of their TCS foods out of temperature for more than 4 hours. All of the temperature abused food items were discarded during the inspection. See voluntary condemnation.
4-301.11 — The equipment available is not capable of cooling, heating, or holding foods at the temperatures required by the code.
Corrective action: Inspector observed five cold holding units not functioning properly and leading to multiple TCS food items being above cold holding parameters. Two units in the pizza prep line, two units on the hot food prep line, and the unit underneath the flat-top stove will need to have work orders submitted for repair.
None — 51: 5-205.15(A) Inspector observed three areas of pooling water in the dish pit, dry storage and water heater areas of the facility. During the inspection, the water level was increasing and creeping toward food prep areas of the facility. Inspector observed a slow leak from the water line behind the dishwasher and from the water line behind the three comp sink but could not confidently identify the source of the problem. The person in charge explained that they squeegee the area into the floor drains three times a day. Inspector instructed person in charge to hire a licensed plumber to identify the source of the water leak and repair the system.
