Corrective action: Inspector will provide person in charge with an appropriate procedure.
3-501.14 — Foods were not cooled from 135°F to 70°F within 2 hours or from 135°F to 41°F within 6 hours.
Corrective action: Inspector observed cooked rice that was left out temping at 48 degrees F. Person in charge moved the rice into the walk-in cooler during the inspection.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold holding at internal temperatures greater than 41°F.
Corrective action: 1) Inspector observed 1 tray of cut cabbage that was sitting out for over an hour temping at 50 degrees F. Person in charge moved the cabbage into the walk-in cooler during the inspection. 2) Inspector observed 1 tray of cut cantaloupe temping at 48 degrees F on the buffet line for less than 4 hours. Person in charge added ice to the cantaloupe during the inspection to restore proper cold holding temperature. 3) Inspector observed the front cooler unit temping at an average of 50°F. The following items were in the unit for less than 4 hours and were moved to the walk-in cooler: 1 tray of dumplings, 1 try of egg rolls and 1 tray of par cooked chicken. The following items were disposed of due to being outside of cold holding parameters for more than 4 hours: 1 tray of shrimp and veggies and 1 container of sauce. See voluntary condemnation. Person in charge will submit a work order to have the unit repaired. 4) Inspector observed the reach in cooler near the hot line with raw pork, chicken, noodles, and beef holding between 43 - 45°F for less than 4 hours. All of the food items were moved to the walk-in cooler during the inspection.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Inspector observed trays of rice noodles, egg rolls, and rice in the walk-in cooler that were stored for over 24 hours with no date marking present. Person in charge added date marking labels during the inspection.
None — 37: 3-602.12(C) Consumers were not notified of presence of major food allergens in unpackaged foods as required by the code. Inspector will provide the appropriate poster for food allergens.
6-202.15 — Outer openings were not protected against the entry of pests.
Corrective action: Inspector observed the back door with large openings at the top and bottom of the door. Person in charge was instructed to seal the opening with weather stripping.
3-304.14 — Wiping cloths were not held in a reasonably clean sanitizer solution of appropriate concentration between use.
Corrective action: Inspector observed a container of chlorine bleach with the wiping cloth dry on the counter next to it. Person in charge returned the cloth to the sanitizing solution during the inspection.
