Spoke with person in charge about proper storage separation for these items. Items were moved to proper shelves during inspection.

Corrective action: Observed employees rinse dishes off without washing dishes with soap and water and using a sanitizer after. Spoke with person in charge about ware washing procedures and that dishes shall go through a wash, rinse, and sanitize step when being washed to prevent the risk of contamination.

Corrective action: Observed several bottles of sauce in the kitchen and sushi prep area without labels indicating the contents. Spoke with person in charge about adding labels to these items.

Corrective action: Spoke with person in charge about putting in a work order for this item and move food products from the area in the meantime to prevent the risk of contamination.

Corrective action: Observed multiple common towels in the facility. Spoke to person in charge about ensuring towels are being kept in the sanitizer bucket when not using them.

Corrective action: Observed employees wash dishes and then use towels to dry dishes without allowing them to air dry. Spoke with person in charge about allowing dishes to air dry to prevent bacteria growth from contamination.
