Corrective action: Observed employee crack eggs with gloves on and then proceed with new gloves without a hand wash in between. Spoke with person in charge about ensuring hands are washed in between changing tasks.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold holding at internal temperatures greater than 41°F.
Corrective action: Observed several temperature-controlled items including deli meats in the cold holding unit with internal temperatures of 44-46 degrees F for more than 4 hours. Spoke with person in charge regarding proper cold holding temperatures. All items were discarded during inspection. See voluntary condemnation.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Observed deli meats in the cold holding unit and opened milk in the standing fridge being held for more than 24 hours without a date mark. Spoke with person in charge about proper date marking requirements.
4-301.11 — The equipment available is not capable of cooling, heating, or holding foods at the temperatures required by the code.
Corrective action: Observed the cold holding unit in the kitchen with an ambient temperature of 49 degrees F and internal temperature of 44-46 degrees F. Spoke with person in charge regarding temperature for this cooler and to put in a work order for this item. Bottom of item will not be used until proper temperature of 41 degrees or below are obtained.
