3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: 1) Inspector observed shredded cheese and shredded lettuce holding at 45 °F for less than 4 hours in the grab-in cooler. Person in charge adjusted the temperature of unit and was able to bring the food below 41°F during the inspection. 2) Inspector observed shredded cheese in the storage cooler holding at 44 °F for less than four hours. Person in charge moved the cheese to a different unit and adjusted the temperature of the cooler to achieve proper temperature.
3-302.12 — Working containers holding food or food ingredients that are removed from their original packages shall be identified with common name.
Corrective action: Inspector observed containers of cornstarch and flour without a label. Person in charge added a label during the inspection.
