2-301.14 — Employees were observed failing to wash their hands when required by the code.
Corrective action: Observed 1) employee fail to wash hands before donning gloves and after handling raw eggs. Discussed when to wash with employee, hands were then washed. 2) Employees were observed washing hands in a sink not designated as a hand washing sink. Observed hands being washed in the 3 compartment sink. Discussed where to wash with employee.
None — 15: 3-302.11(A)(3)-(8) Raw animal foods were not separated from ready-to-eat foods during storage, or preparation, to prevent cross-contamination. Observed 1) packaged raw beef and raw meatballs stored in the refrigerator next to ready to eat foods. Raw food was moved from ready to eat foods during inspection. 2) Single-use gloves were not discarded when they became soiled and/or damaged. Observed employee crack raw shelled eggs then proceed to touch/contaminate other surfaces with same gloves on. Discussed glove use with employee. Gloves were removed, contaminated surfaces sanitized and hands washed during inspection.
None — 16: 4-602.11(A)(1)-(5) Equipment, utensils, and/or food-contact surfaces are not sanitized using approved methods after being cleaned and before use. Observed spatula used to cook raw eggs was not sanitized after use and before using on other foods. Was also informed dishes are washed but not sanitized. Discussed cleaning frequency with person in charge.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Observed 2 metal container of cooked ground beef held for more than 24 hours with no dates and 1 container of pozole held for a unknown amount of time with no dates. Discussed date marking with person in charge and pozole was discarded.
3-603.11 — Raw or undercooked animal foods were served without a consumer advisory.
Corrective action: Burgers are cooked to order with no consumer advisory on the menu.
7-204.11 — Observed chlorine sanitizer test above 200 ppm.
Corrective action: Sanitizer was remade to 50 ppm during inspection.
4-302.12 — A food thermometer, capable of reading food temperatures required by the code, was not available for use.
4-302.14 — A test kit or other device that accurately measures the concentration of sanitizing solution was not available at time of inspection.
Corrective action: Facility does not have test kit for measuring chlorine sanitizer. Test kit was provided during inspection.
