Corrective action: Observed 1) a bag of cotija cheese around 50°F in an ice bath on the main prep table for less than four hours. 2) Several food items within the reach in cold-holding unit around 50°F for less than four hours. Discussed with the person in charge that these items were recently placed into these units and will be used within a four hours. Discussed with the person in charge about using time as a public health control to ensure food items are used within an appropriate time frame.
