Corrective action: Observed employees failing to wash their hands in between changing tasks such as from handling money to ready to eat foods. Spoke with person in charge about proper hand washing. Hands were washed during inspection.
None — 16: 4-501.114(A)-(E),(F)(1)-(2) Chlorine sanitizing solution intended to sanitize food contact surface(s) did not have a concentration between 50-200 ppm along with the corresponding pH and temperature. Observed sanitizer bucket with a concentration abobe 200 ppm. Spoke with person in charge about proper sanitizing concentration for chlorine sanitizer. Water was added to bucket to dilute solution during inspection.
3-501.13 — Reduced oxygen packaged fish was not thawed as indicated by a label on the package.
Corrective action: Observed tilapia being thawed in the refrigerator while still being in a vacuum sealed packaged, when label indicated product should be removed before thawing. Spoke with person in charge about ensuring to read the labels on vacuum sealed products. Frozen fish package seals were cut during inspection, and thawed fish were discarded during inspection.
