Corrective action: Inspector observed that the cutting boards for preparing sandwiches were not cleaned at a frequency to prevent the buildup of debris. Person in charge had the board wiped down and will continue to clean the boards at an increased frequency during slower periods. 2) Chemical sanitizing solution(s) used to sanitize food contact surfaces were not being used in accordance with the manufacture's use instructions. Inspector observed that the chemical sanitizing solution in both kitchen sanitizer buckets was below the required concentration. Person in charge remade the sanitizing solution for both buckets and used test strips to show that they were in the correct concentration. 3) The mechanical chemical dishwasher was not testing within 50-200ppm for Chlorine Bleach. Person in charge will use the three-compartment sink to sanitize their dishes until Ecolab can repair the mechanical dishwasher.

Corrective action: Inspector observed pepperjack cheese, american cheese, and turkey cold-holding at 44 °F for less than four hours on the sandwich prep line. Person in charge showed temp logs taken at 10am showing the items to be below 41°F and explained the next temps would be taken at 1pm. If the temperature was still over 41°F at the second temperature reading, person in charge will discard the items.

Corrective action: Inspector observed a container of giardiniera with no label or date mark. Person in charge discarded the item during the inspection. See Voluntary Condemnation.

Corrective action: Inspector observed the floor drain below the syrup dispenser blocked with cardboard debris. Person in charge will clear the drain.
