Corrective action: Observed staff food and beverages stored in the food preparation area. Employee beverages did not meet the requirements in the code. Observed canned and screw-top beverages stored in the food preparation area. Staff food and beverages were removed form kitchen.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed red and green salsa holding at 44-49°F in the cold condiment holding unit in the service area for mor than 4 hours per person in charge. Salsas were discarded see Voluntary Condemnation.
4-301.11 — The equipment available is not capable of cooling, heating, or holding foods at the temperatures required by the code.
Corrective action: Observed food in the cold table in service area holding food at 44-49°F. Error code was discovered on control panel. Person in charge is submitting a work order to fix unit.
6-202.15 — Outer openings were not protected against the entry of pests.
Corrective action: Observed light underneath the receiving door. Person in charge will submit work order for weather stripping.
