6-301.14 — Hand washing sinks lacked signs telling employees that they must wash their hands.
Corrective action: Hand washing sinks lacked hand washing supplies as required by the code. 1.) Observed sink near the dry storage that the person in charge claimed was a handwashing sink without proper signage. Spoke with person in charge about needing proper signage. 2.) Observed the handwashing sink near the dry storage without supplies required to maintain handwashing operations. Discussed the need for paper towels and soap with the person in charge.
3-202.15 — Cans/packaged food containers were dented or damaged.
Corrective action: Observed a severely dented can of 1 lb and 12.2 ounces of mushrooms near the three compartment sink storage area. Corrected on site, discussed this with the person in charge and they will be returning to the vendor. See below for voluntary condemnation.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed a seven ounce bowl of brisket chili in the front cold holding unit near the cash register cold holding around 51°F for more than four hours. Spoke to the person in charge about discarding the chili. See voluntary condemnation below.
5-202.13 — An inadequate air gap between the water supply inlet and the fixture flood rim was present.
Corrective action: Observed hosing attached to the water supply inlet submerged in the three compartment sink that was filled with sanitizer. Discussed this with employee and they promptly lowered the water to allow for an adequate air gap.
